Material

High gluten flour 200g

Fine sugar 20g

High sugar resistant yeast 2.5g

Salt 2g

water 20g

Milk 125g

Unsalted butter 20g

Butterfly pea pollen 1g

Hot water 6g





Steps

①Put all the dough ingredients except butter into the kneading bowl, mix the mixer at low speed and then turn it to high speed. After kneading until a rough film is formed, add softened butter and continue kneading until a glove film appears.

②Add hot water to butterfly pea pollen and dissolve it into a blue paste.

③Divide the dough evenly into 4 parts, one part is white, add 0.6g, 1g, and 2g of butterfly pea flower paste to the other three parts respectively (adjust the amount according to the coloring), and knead into a uniformly colored dough.

④Put it into the fermentation box and ferment it at 28 degrees Celsius for about 40 minutes at a time until it does not shrink back when you poke a hole with your finger.

⑤Press to release the air and roll out the dough into shape.

⑥Put it into the mold for secondary fermentation at 35 degrees for about 45 minutes until the surface swells (about 12 minutes full).

⑦Set the oven to 150 degrees for upper heat and 180 degrees for lower heat, and bake the middle and lower layers for about 25 minutes.

⑧After baking, take it out of the mold and slice it after cooling. You will get slices of lovely mushroom white bread.

Warm Tips:

1.The amount of flour used in a 450g toast box is 250g, and the dough input modulus is 480g-510g. (No more than 500g is recommended for baking with lid)

2.Baking time reference: upper heat 170, lower heat 210; the time is about 25-28 minutes. (The baking and fermentation time with lid is recommended not to exceed 8 minutes full)
