Cheesecakes have always been a crowd-pleaser, and when combined with the delicate flavors of caramel and Earl Black tea, they become a truly irresistible treat. In this article, we will guide you through the process of creating a delectable Caramel Earl Grey Cheesecake from scratch.

Material

Digestive Biscuits:200g

Melted Butter:100g

Cream Cheese:500g

Granulated Sugar:200g

Double Cream:200ml

3 Earl Grey tea bags

3 large eggs

1 tsp vanilla extract

Saramel Sauce:150g

Whipped cream and caramel sauce for garnish




Steps

Step 1: Prepare the Base

Start by crushing the digestive biscuits into fine crumbs. This can be done by placing them in a resealable plastic bag and using a rolling pin to crush them. Alternatively, you can use a food processor for this step. Once the biscuits are finely crushed, mix them with the melted butter until well combined. Press the mixture firmly into the base of a greased 8-inch springform cake tin. Place the tin in the refrigerator to chill while you prepare the filling.


Step 2: Infuse the Cream

Pour the double cream into a small saucepan and heat it over medium heat until it begins to simmer. Remove the pan from the heat and add the Earl Grey tea bags. Allow the tea bags to steep in the cream for about 10 minutes, ensuring the flavors infuse thoroughly. Afterward, remove the tea bags and set the cream aside to cool.


Step 3: Prepare the Filling

In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and gradually pour in the infused cream while continuing to mix. Finally, swirl in the caramel sauce, ensuring it is evenly distributed throughout the filling.


Step 4: Bake and Cool

Preheat your oven to 160°C (325°F). Take the chilled base out of the refrigerator and pour the filling over it. Smooth the surface with a spatula, ensuring an even layer. Place the cake tin in the preheated oven and bake for approximately 50-60 minutes, or until the edges are set but the center still has a slight wobble. Once baked, turn off the oven and leave the cheesecake inside for another hour to cool gradually. This helps prevent cracking.


Step 5: Finishing Touches

After the cheesecake has cooled, remove it from the oven and let it come to room temperature. Once it has cooled completely, transfer it to the refrigerator and chill for at least 4 hours, or overnight if possible. This allows the flavors to develop and the cheesecake to set properly.


Before serving, you can garnish the Caramel Earl Grey Cheesecake with whipped cream and drizzle some additional caramel sauce on top for an extra touch of indulgence. Slice and serve this exquisite dessert to your guests, and watch their faces light up with delight.
