440g taro

20g butter

4g purple potato powder

40g sugar

10g milk powder

[Osmanthus cheese]:

200g cream cheese

Osmanthus sauce (appropriate amount)

Steps

1. Steam the pumpkin, drain the excess water, and let it cool for later use. Mix all the ingredients except butter evenly, knead until it is a rough film, then add softened butter and mix, and finally knead it into a thin film.

2. Smooth the dough and ferment it at 28 degrees until it is twice as large. Poke a hole to observe the state, and the dough will slowly shrink.

3. Press the dough to exhaust, divide it into 5 portions, and shape it into round balls with smooth surfaces. Cover with plastic wrap and relax for 15-20 minutes.

4. After relaxation, the bottom of the dough is facing up, and it is tied into a rice shape with a 1-2mm cotton rope soaked in oil. Finally, the top is closed and tied down (tips: Be careful not to tie it too tightly to leave space for the dough to ferment).

5. Ferment in the oven at 35 degrees until it is twice as large, about 30 minutes.

6. Brush with egg liquid, preheat the oven to 180 degrees and bake for 20 minutes in advance. During the process, cover with tin foil in time according to the color of the bread to avoid too dark color.

7. Brush melted butter on the surface after it comes out of the oven to make the bread look shiny. After the bread cools down, you can remove the string and decorate it with pumpkin seeds.

8. How to make taro paste: Steam the taro, crush it and add the remaining ingredients to mix evenly. The texture is soft but not very fluid. How to make osmanthus cheese: Mix the cream cheese until smooth, add appropriate amount of osmanthus sauce and mix well. Put it in a piping bag for later use.

9. Divide the pumpkin bun into two, add taro paste in turn, squeeze a layer of osmanthus cheese on it and it's done.
