Glutinous rice wrapper:

100g glutinous rice flour

30g corn starch

35g sugar

150g butterfly pea water

15g butter

Blueberry jam:

200g blueberries

45g sugar

A small amount of lemon juice

Blueberry cream filling:

220g whipped cream

15g sugar

55g blueberry jam


Steps

1. Put a small amount of blueberry + sugar + lemon juice in the pot, mix and mash, heat on low heat until thick and cool for later use.

2. Heat butterfly pea flower + water in the pot on low heat to cook out the color, sift once, cool and set aside.

3. Mix glutinous rice flour + corn starch + sugar + butterfly pea flower water, stir evenly, sift once, cover with plastic wrap, poke a few holes, steam in the pot, add butter and mix and knead after steaming, and pull the dough repeatedly to make it more elastic.

4. Whip light cream + sugar + strawberry jam until there are obvious lines for later use.

5. Arrange the dough into shape, take 4.5g/piece of dough and roll it into a round shape, put it on the mold, squeeze blueberry cream filling + squeeze blueberry jam in the middle + squeeze another circle of blueberry cream, close the mouth and wrap it tightly.

6. Spread some flour on the dough to prevent sticking, sprinkle purple potato powder and dried osmanthus on the surface, and a cool summer dessert is ready.

 

Tips:

1. Selection of glutinous rice flour: Use high-quality glutinous rice flour to ensure the elasticity and softness of the outer skin.

2. Anti-sticking treatment: After the glutinous rice flour paste is steamed, you can sprinkle some cooked glutinous rice flour (or corn starch) on the workbench and hands to prevent sticking, which is convenient for stuffing.
