Boiling sugar water: 500g water + 25g sugar
①Add all the above bagel ingredients into a kitchen machine and make a rough film (you can also knead it directly by hand).
②Cut the dough directly into 6 portions (each portion is about 81g), cover with plastic wrap and rest for 30 minutes, or place it in the refrigerator to rest.
③Shape the dough, first roll it into a tongue shape, turn it over and arrange it into a rectangular shape, press the bottom with your hands to make it thin, apply taro paste (about 30g) and leave white space around it, then roll it up from top to bottom and pinch the closing area tightly. Roll a long strip with both hands, flatten one end and roll it out, wrap it up and close it, still pinching it tightly.
④In summer, turn off the oven and put a bowl of warm water in it to let it rise for 30 minutes.
⑤Bring water and sugar to a boil in a pot, then turn down the heat to low until small bubbles appear at the bottom. Add bagels, cook the front and back sides for 20-30 seconds each, remove and place on the baking sheet.
⑥Preheat the oven and bake at 200 degrees for 20 minutes.
⑦Taro puree is steamed taro, sugar, purple sweet potato powder and milk pressed together into a puree.
⑧Store the prepared bagels in the freezer. If you want to eat them, transfer them to the refrigerator the night before. Bake them again the next morning using an air fryer at 180 degrees for 5 minutes.
