Milk jelly part:
gelatine tablets 5g
Milk 125g
Fine sugar 25g
Corn starch 10g
Matcha powder 3g
Light cream 75g
Crust part:
Eggs: 2 (55-60g in shell)
Milk: 150g
Light cream: 42g
Matcha powder: 5g
Low gluten flour: 37g
White sugar: 25g
Stuffing part:
Light cream 200g
Fine sugar 17g
①Mix all ingredients except gelatine tablets, stir well, and sift 2-3 times.
②Pour into a non-stick pan, heat over low heat, stir while heating until thick yogurt-like consistency, remove from heat and let stand until warm but not scalding, add gelatin slices soaked in cold water and mix well.
③Take a small square box, cover it with plastic wrap, pour the milk jelly into it, and refrigerate it until it solidifies before use.
④Put all the ingredients for the cake crust in a bowl and stir with an egg beater, then sift 2-3 times.
⑤Preheat a non-stick frying pan over low heat. Pour a large spoonful of batter into the pan. Shake the pan vigorously to spread the batter as flat as possible. Remove from the pan after the pancake has a lot of bubbles. You can place it directly on the pan after it is out of the pan. On the baking tray, all the crusts are staggered and stacked so that they can be easily separated when in use.
⑥Beat the whipping cream + sugar for filling to 80%.
⑦Take 4-5 pieces of pie crust and stack them, spread butter on them, put the custard on the front, fold the head, tail and sides of the pie crust inward (as shown in the picture), and roll it up gently.
