Finger Biscuit Ingredients:

Eggs: 2

Sugar: 35g

Cake Flour: 60g

Cheese paste ingredients:

Egg yolk: 2

Sugar: 30g

Whipped cream: 200g

Hot milk: 10g

Gelatin: 10g

Mascarpone cheese: 250g

Rum: appropriate amount

Prepare other ingredients:

Coffee liquid: 200g

Coffee liqueur: 5g


Steps

Finger Biscuit Steps:

1. Separate the egg yolk and egg white, add sugar to the egg white three times (fish-eye-shaped bubbles for the first time, fine bubbles for the second time, and lines for the third time) and beat until it is a small hook shape

2. Add the sifted cake flour and stir quickly and evenly

3. Put it in a piping bag and squeeze it into a long strip about 2 cm wide

4. Preheat the oven in advance and bake at 170 degrees for 20 minutes


Tiramisu Cake Steps:

1. Beat egg yolks and fine sugar in hot water until fluffy and white. You can add a small amount of rum to relieve the greasiness.

2. Beat the whipped cream until it is like yogurt (don't overbeat it!)

3. Put the softened gelatin sheets into the hot milk and stir until the gelatin melts (gelatin should be soaked in cold water. If the gelatin is difficult to melt, you can microwave it for a few seconds!)

4. Add the softened mascarpone cheese to the milk, egg yolk paste, and whipped cream paste, and beat them evenly with a whisk

5. Pour coffee liqueur into the cooled coffee liquid, and dip the biscuits on both sides 2-3 times

6. Arrange them in a box in order, pour half of the cheese paste, put another layer of biscuits, pour the remaining cheese paste, and smooth it with a spatula

7. Cover with plastic wrap and put it in the refrigerator for at least 4 hours

8. Sieve cocoa powder on the refrigerated cake and you can start eating!

 

Tips:

1. The egg yolk needs to be beaten with hot water. This step can be skipped if the eggs are sterilized.

2. If you don't like the taste to be too greasy, you can add appropriate amount of rum in the step of beating the egg yolk and the final mixing step.

3. When the finger biscuits are dipped in coffee liquid, just wet them slightly and turn them over. Don't soak them all.
