Steps

①Separate the egg yolk and protein, put them in water-free and oil-free containers, and refrigerate the egg white for later use.

②Stir milk and corn oil until emulsified.

③Sieve in the low-gluten flour, and stir in a Z shape until there is no dry powder.

④Add the egg yolks in batches and stir evenly with an egg pump. The final batter is fine and smooth.

⑤Take out the egg white from the refrigerator, add a few drops of lemon juice, add fine sugar in three times and beat until it becomes a large hook-shaped wet foam, and lift the egg head to have a small hook.

⑥Preheat the S90 stove to 165 degrees in advance. Take 1/3 meringue into the egg yolk batter and mix well. Pour the mixed meringue and egg yolk paste back into the egg beater filled with meringue, and continue to mix well.

⑦Spread silicone oil paper on the baking tray, pour the mixed batter into the baking tray from a height of 15cm, turn the baking tray to make the batter even, and shake out the air bubbles in the batter.

⑧Bake in the oven at 165°C for 25 minutes, which needs to be adjusted according to the actual situation of the oven.

⑨Take it out after the baking is completed, and shake the hot air out of the oven to cool.
